The BEST Banana Bread Recipe Ever

January 2, 2014 By: Stephaniecomment

We hosted a New Year’s Day brunch this year and one of the things I made was banana bread.

I modified this recipe and the results were ridonkulous, you guys. Best Banana Bread Evah. You must have this banana bread in your life.

If you are looking for the best banana bread recipe of all time (Who isn’t? Don’t you just spend every spare second of your life on the hunt for the perfect banana bread recipe? Forget about homework and bathing your kids. The banana bread recipe must. be. found.), relax.  I have it for you right here.

I have to warn you, I fought with this one a little bit. It started to get too done on the sides when the inside was still totally liquidy. I covered the edges with foil about 45 minutes into the cooking process and that seemed to help a lot.

Without further ado, here it is:

The BEST banana bread recipe ever

The Best Banana Bread Recipe of All Time:

2 eggs, beaten

1/3 cup milk

1/2 cup vegetable oil

3 over-ripe bananas, mashed

1 cup of white sugar

1/2 cup dark brown sugar

1 3/4 cup all purpose flour

1 ts baking soda

1/2 ts salt

1 tsp vanilla extract

1 tablespoon cinnamon

Directions:

1. Beat together eggs, milk, oil, vanilla, and bananas

2. In a separate bowl, sift dry ingredients together. (You don’t need to sift the brown sugar, just add it in)

3. Combine ingredients and pour into greased loaf pan

4. Bake at 325 for 80 minutes or until a knife comes out clean. (Place aluminum foil on edges if they start to darken before the middle is set)

This is not going to help my New Year’s diet.

Thanks for visiting today! If you liked this recipe, don’t forget to pin it!

Happy Birthday, Penelope!

December 30, 2013 By: Stephanie2 Comments

Look who is two!

Although we had her Smurf-themed birthday party earlier this month, today is Penny’s real birthday.

penny-pondering

I hope I always remember you at this age and the way you…

go to bed late and wake up (very) early

already tell us when you have to go potty (except you say “off room,” your word for the bathroom)

say “Welcome!” when you really mean “Thank you”

always try to sneak extra food to the dog

love baths

will not let me do anything with your hair

always have a crusty nose

kiss other people’s boo-boos

run to daddy with your arms out before he leaves in the morning, saying “Hug!”

think daddy is home every time you hear me open the garage door during the day

love string cheese and any other snack you are allowed to eat on the sofa

are infatuated with Dora the Explorer

use a singsong voice, tilt your head to the side, and smile when you say, “Noooo.”

are the only child in this house who does not care what color cup, bowl, plate, spoon, etc. I give you

have been singing Happy Birthday to yourself since last night.

Happy Birthday, Penelope Christine!

How to Take Great Pictures of Christmas Tree Lights

December 23, 2013 By: Stephanie4 Comments

How to make the lights on your tree look like stars in your Christmas photography

Merry Christmas, you guys!!! It’s almost Christmas Eve and Eddie has been asking me for a while if he could guest post on the blog about his latest passion: photography. Of course I said yes, and he has a very cool technique to share about how to photograph light. Particularly, Christmas tree lights.

How to Make Christmas Tree Lights Look Like Stars with Your DSLR.jpg

Hey everybody, it’s Eddie. You know, the Hubs. By now you oughtta have that Christmas tree up. If not, what are you doing reading this? Go put it up!

It’s up? Good. Decorated and lit? Better. Photographed and ready for Facebook? Cool. After all, who doesn’t like to take a picture of their hard work? I know I like to. Did the picture come out kind of blah? Just not feelin’ it? Don’t worry, it happens. I’ll let you in on a secret (and by secret, I mean you can find this technique, in a sense, all over the internet) to make that picture shine a bit more. Here’s what you need to make the lights look like stars:

  1. DSLR Camera (a point-and-shoot just won’t cut it) We started with a Canon EOS Rebel
  2.  Tripod (unless you have surgeon’s hands)
  3. Timer Shutter Release Remote Control (recommended, but not required)

That’s not too bad is it? You’ve got the gear, now you need the technique. First, a little explanation. If you’ve used your DSLR and understand some basic principles of photography, you’ll know that the aperture dictates the depth of field and therefore how much light is let in the camera. The smaller the aperture (higher f-stop, e.g. f/22), the greater depth of field, but the less light you let in. Conversely, the larger the aperture (lower f-stop, e.g. f/1.8), the shallower depth of field, but the more light you let in. Confused? Don’t worry. I noticed something the other day that (I think) translates well as an analogy:

Go stand in front of that lit tree. Open your eyes all the way (like someone just said something super surprising). Notice the way the lights “enter” your eye. The light is kind of “rounded.” Now squint your eyes until just a bit of the lights are showing. Notice how the lights turn into much sharper points and begin to develop rays? This principle is known as diffraction. The light is being squeezed through a much smaller opening and then bounced around inside your eye/lens.

To get the starry look when you are taking pictures of Christmas tree lights, you’ll need to crank your aperture down to at least about f/8 or f/11. Problem is, you aren’t letting in much light because you’ve closed down the aperture and your shutter speed will be too low to handhold. In comes the tripod. Mount that sucker on the tripod (or a steady surface, like the kitchen counter, if you don’t have one). If you’ve got a remote shutter release, now is the time to use it to avoid camera shake. If not, set the shooting mode to have a 2-second delay to remove any vibration from pressing the shutter release. You may want to turn off the Image Stabilization or Vibration Reduction as well, since this will actually impart movement. Fire away.

All of the following pictures are straight out of the camera:

train_lights

This technique won’t work with things that are constantly moving (like kids!), but it is a very cool trick for making your photos of things that are standing still have some extra pop.

Now that you know the technique, you can apply it to any light source that piques your interest.

 Have fun!

Christmas Concerts and a Very Bad Day.

December 19, 2013 By: Stephanie2 Comments

I had a bad day yesterday. I mean, it was like comically bad. It started out trying to get Nick to school. His school is less than a block from our house, so he usually walks, but since we have gotten so much ice and snow lately, I’ve been driving him. The doors to our van were frozen shut in the morning, so we started walking, but Nick and I both fell on the ice before we even got out of the driveway, so we went back to the van and all the kids had to climb in and out through the driver’s door. We slipped the whole way to school, but we got him there safely.Thankfully, nobody got hurt on the ice either. Did I mention that our windshield is cracked in half because it had a very small chip in it and when we got so much ice the small chip turned into a 3 foot wide crack?  (Windshield replacement is on today’s schedule.)

Then I discovered the kids had locked their bathroom door shut. I discovered this when Penny, who is almost two, told me she had to go potty. All the diapers were locked in that bathroom. I went to find something to try to jimmy the lock open and discovered the dog had peed on the new carpet in our master bedroom. I threw down some paper towels and yelled at the dog and put her outside. Then I went back to poor Penny, who had an accident because I couldn’t get her to the potty on time. I used the last diaper in my purse to clean her up. I still couldn’t get the bathroom door open.

Then I discovered the dog had run away.

I spent half an hour looking for her and called Eddie crying because she was still missing, but I had to get Abby to school for her Christmas tea. He started to leave the office and as I was pulling out of the driveway, who did I spy hiding behind a neighbor’s shed? The dumb dog. We got her back inside, but we were a little late for Abby’s preschool party.

The parents had some time before we were supposed to come back to see the kids sing, so I took Penny to a store near Abby’s school for some last-minute shopping and to pick up diapers. (Related: Have you ever had to go to the bathroom in Ollie’s Bargain Outlet, hovering over the toilet whilst holding a sleeping toddler? I have.) Guess who forgot the case of diapers was on the bottom of the cart as we checked out and accidentally shoplifted them? Yeah, it was me. Neither I or the checkout girl noticed them there. I have to admit, once we were back to the van-where I noticed them-I considered just taking them home after all that, but I figured I had enough bad karma for that day and I went back to the store and stood in the crazy holiday lines again to pay for them.

We made it to Abby’s Christmas tea. Although, I did leave my car keys in the preschool bathroom while we were there.

I swear, one of these days I will get it together. Maybe.

Nick also had his Christmas concert at school this week, so I’ll leave you with these pretty pictures.

Remember that behind all the “perfect” pictures like these that you see on blogs and Facebook, there is a mom who has her fair share of not-so-perfect days too.

Now, if you’ll excuse me, I have to go write a check for $265 to the man in my driveway who is here to fix my windshield.

Ad:orable Smurfs Themed Birthday Party. Happy SMURFday Penny!

December 18, 2013 By: Stephanie7 Comments

This year, for Penny’s birthday, I decided to do a Smurf-themed party as part of a campaign I am working on with Collective Bias for Tyson’s chicken.

smurfday party ideas #shop

My kids were first exposed to The Smurfs over the summer when the first Smurfs movie came to our local theater as the $1 Family Movie. Now that the Smurfs 2 is out on DVD, they have been asking to see it. I thought it would be fun to get the DVD for them and throw a “Smurfday” party for Penny. This turned out to be a great theme because it is hard to find ideas that work for children’s birthdays right around the holidays. (Her real birthday is five days after Christmas.) But because these decorations were blue and red, there were a lot of affordable options in the holiday section at Walmart and it didn’t look too “Christmas-y” once I put them together.

The worst part about having a child whose birthday is around the holidays is all of the extra shopping. I had to make an extra trip to the store in December, which is never fun, but I was able to find everything I needed, so it was relatively painless, as far as trips to Walmart in December with your children go.

Tyson #shop

We like to keep our birthday parties small, so we only invited one other family to celebrate with us. My dear friend Chrissy is Penny’s godmother and her children are about the same ages as our girls. They drove from out-of-state to spend the afternoon Smurfing it up together.

smurf party #shop

We used Tyson’s new batter-dipped chicken tenders to make miniature (Smurf-sized) chicken sliders on Hawaiian rolls. They are each made of one chicken nugget on a mini roll with bacon and cheese. I set out honey mustard and ranch dressing so that the kids could pick which kind they wanted.

They went over well.

We also served mini English muffin pizzas and some other red and white snacks (strawberries, cherry tomatoes, popcorn, and banana slices) to match the decorations.

I made those standing Smurf decorations by printing images I found online and gluing them onto a cereal box.

smurf cut outs #shop

I used more strips of cardboard to make sort of a triangle in the back, so they could stand up.

Everyone got their own personalized cup. These came in packs of four for $1 and I just dew on them with a permanent marker. The drawings will wash of eventually, but they lasted through the party.

smurf cups #shop

Dessert was an adorable store-bought cake that I stuck some Smurf Mega Blocks on top of. (Can you believe that they just happened to have this polka dot cake in the bakery section of our grocery store and it matched my decorations perfectly! I still can’t get over it. I didn’t have to special order it. $8 well spent.)

smurf cake #shop

We also had the options of red, white and blue Popsicles or these cake pops I made, which are supposed to resemble the mushroom houses that the smurfs live in. The originals from The Paper Pony, which I found via Pinterest, were much cuter. (That’s the same place I got the idea for the cardboard Smurfs.)

For favors, I made each child their own personalized Smurf hat. I’m pretty sure that was the first time I’ve used Puffy paint since 1993. It was a very simple sewing project, but it was fun. Since it was so easy, even Abby (who is 4 and a half) could help. She was very proud of herself!

 smurf girl #shop

And there’s the birthday girl in her hat!

We also gave out Smurf-themed Mega Blocks and blue Play-Doh favors.

I love the way these take-out boxes turned out! The labels are from the Beauty and Brains Girls Etsy shop. They emailed me my custom order and I just had to print them out and glue them on the front of each box. Aren’t they seriously stinkin’ cute?!

smurf party favors #shop

We didn’t plan any games because the birthday girl is only turning two and that seemed too young to plan anything organized. It was totally fine because the kids had a blast just playing with each other and the train we have running around the bottom of the Christmas tree.

Eddie told me I had to be in at least one picture too. Obligatory mom shot:

Our trip to The National Christmas Center

December 17, 2013 By: Stephanie3 Comments

We have been snowed in for the past two weekend in a row. Everyone was going a little stir-crazy, but thankfully by Sunday afternoon the roads were clear enough that we could get out of the house. We are lucky enough to live about 40 minutes from The National Christmas Center in Paradise, PA, which claims to be the only strictly Christmas Museum in the world. (I have no idea if that is true.) So we decided to take the kids. Eddie and I had been there before on a date night a few years ago, but this was the first time for the kiddos. Nick and Abby both really loved it! Nick loved the trains and Abby loved the dolls and they both loved meeting Santa. Penny tolerated everything as best she could from her stroller.

If you ever get a chance to check it out, I highly recommend it. They have everything from a beautiful train garden, to a visit with Santa, to a 5 and 10 cent store, to a life-sized nativity walk where you get to see historical replicas of the kinds of house and streets where Jesus would have really lived. Their website really doesn’t do it any justice at all. It’s a very cool place. Think of everything you would want a Christmas museum to be. It’s just like that.

We appreciated that it is a self-guided tour, so if the kids weren’t particularly interested in something we could skip it. Conversely, if they loved something (like the trains), we could go through that exhibit three times (like the trains).

I’ll stop talking now so you can see the pretty pictures.

So, I Started a Conference. BlogU: The Blog University

December 16, 2013 By: Stephanie9 Comments

Once upon a time, there was a frazzled mom sitting in front of a computer screen. She was home all day pulling her hair out, trying to raise a toddler with special needs and an infant who would not sleep. Oh, and she was pregnant. Again. Her husband’s job had him traveling for months at a time, so she spent a lot of lonely nights on the computer, seeking connection to the outside world via mommy blogs. She would have given anything to be able to meet those women inside the computer in real life. To laugh with them, share with them, ask them questions about how they took a hobby like writing and turned it into a career. She thought of starting a conference, but her blog was small and her connections were limited.

But her little blog grew. So did her children. And her connections to other bloggers grew too. Everything kept growing until one day she had a few thousand followers and several friends with much bigger networks than her own. They worked together and wrote a few books. Those books instantly shot up the charts and became best-sellers on Amazon and iTunes, because when women channel their creative energy and work together towards a common goal, amazing things happen. Some of her friends even landed on the NYT best-sellers list with their own books. By themselves. No big publishing houses needed.

That’s when she knew.

The conference she had wanted to plan for so long? They could really do this thing.

And they could do it well.

Because for the past several years, those “mommy bloggers” had been working together to support each other and they had reached further than they had ever dreamed.

The emails from other women started coming.

“How can we do what you are doing?”

That group of friends had picked up secrets that they wanted to share. They wanted to be able to bless other people with the success they had seen.

A conference seemed like the perfect way to do it.

As I’m sure you have already figured out, the lady in the beginning of this story was me.

And this conference is real.

We’re calling it BlogU, which is short for The Blog University, and tickets go on sale in January.

We wanted to bring you a new kind of conference. Since building our tribe has felt like such a strong sisterhood, we decided to hold our conference at a women’s college. This also helps us keep costs down and it means that, if you are willing to stay with us in a renovated 19th century building that serves as a dorm on the campus of a gorgeous private university, your room and food costs are INCLUDED in your ticket price. That’s pretty much unheard of.

Also? We’re having a cupcake bar. And a cocktail party. And speakers like NYT best-selling author Karen from Baby Sideburns, and Bunmi from Honest Toddler, and Ilana from Mommy Shorts. (Her blog was a freakin’ Jeopardy question, for crying out loud!) And all of it is included in your ticket price.

It’s kind of a big deal.

June 6-8, 2014 in Baltimore at Notre Dame of Maryland University. Be there.

Check out the BlogU website.

I CANNOT WAIT to share this time with you in June!!!

Lego Minifigure Holiday Cards

December 12, 2013 By: Stephanie1 Comment

This is a Sponsored post written by me on behalf of LEGO for SocialSpark. All opinions are 100% mine.

I don’t know about you, but we live with a 6 and a half (never forget the half) year-old boy who is obsessed with LEGOS. They are always at the top of his Christmas list. Last year Nicholas’ favorite gift was the LEGO train he got from my dad. Guess what he asked Santa for this year? Another LEGO train. Sigh.

So when I got the opportunity to work with LEGO on their new Minifigure postcard website, I knew I had to say yes. It is super easy (and free!) to create these adorable personal LEGO postcards of your family. Just go to the website and click “get started.” You can easily add each member of your family and personalize their face, hair, clothes, even skin color.

If you are like us and never got around to taking that perfect Christmas card photo, emailing these to friends and family could be a fun and affordable alternative.

It was very easy to create and Nick was super excited to see himself as a minifigure. I love the gap in the front teeth that matches his real-life gap while his teeth grow in! I wouldn’t mind if my hair looked that nice every day either.

I chose to put our family inside by the fire. (Yes, it took me a minute to realize we chose the option with the Kwanza candles. Oops. There is a similar scene with Christmas stockings that we can choose next time if we want.)  There are a bunch of other scene selections and holiday greetings to pick from too, from the office to a horse ranch. I’m sure you can find exactly the right fit for your family.

Snow Day

December 9, 2013 By: Stephanie2 Comments

Nicholas’ school district closed today for the very first snow day of the year. Abby’s preschool was open, but only for an hour and a half, so I decided to just keep her home, rather than chance the icy roads.

snowy day

Our grass seed hasn’t come up yet, so there is a whole lot of mud hiding under this snow and our driveway is a solid sheet of ice. Since we can’t play outside, we brought the snow into the house.

We may or may not have already eaten all of those cookies we made yesterday.

Happy Snow Day!

I know it’s a small thing, but I believe small things can add up to big changes. my entire North Bay series, including Out of Left Field, Right as Rain, and Way Off Base, is free on Kindle from Jan. 30-Feb. 3. Please take the funds you might have spent on my books this week and reallocate them toward the areas in our country that need them the most. Follow creators like Dad Chats who can direct you toward practical needs local to them. I hope my quirky romcoms can bring you some comfort and joy during difficult times, and I hope together we can take small, practical steps toward big changes. ... See MoreSee Less

I know there is an overall feeling of helplessness in our country right now. So many of us are at a loss for what to do beyond making phone calls and social media posts (which are still important, but can feel like not enough). I believe strongly in the power of small things adding up to big ones. As one person, I might not be able to do much, but what I CAN do is use my voice and my books to work toward the change I’d like to see. That’s why, for the next five days, from Jan. 30-Feb 3, I’m making the Kindle versions of my entire North Bay series (Out of Left Field, Right as Rain, and Way Off Base) completely free. Art has power, and I do hope these comedies can bring you some comfort and joy in difficult times, but most importantly, I also hope you’ll consider redirecting the funds you might’ve spent on my books and donating instead to one of the many charities working tirelessly in our cities right now.
