The BEST Banana Bread Recipe Ever

We hosted a New Year’s Day brunch this year and one of the things I made was banana bread.

I modified this recipe and the results were ridonkulous, you guys. Best Banana Bread Evah. You must have this banana bread in your life.

If you are looking for the best banana bread recipe of all time (Who isn’t? Don’t you just spend every spare second of your life on the hunt for the perfect banana bread recipe? Forget about homework and bathing your kids. The banana bread recipe must. be. found.), relax.  I have it for you right here.

I have to warn you, I fought with this one a little bit. It started to get too done on the sides when the inside was still totally liquidy. I covered the edges with foil about 45 minutes into the cooking process and that seemed to help a lot.

Without further ado, here it is:

The BEST banana bread recipe ever

The Best Banana Bread Recipe of All Time:

2 eggs, beaten

1/3 cup milk

1/2 cup vegetable oil

3 over-ripe bananas, mashed

1 cup of white sugar

1/2 cup dark brown sugar

1 3/4 cup all purpose flour

1 ts baking soda

1/2 ts salt

1 tsp vanilla extract

1 tablespoon cinnamon

Directions:

1. Beat together eggs, milk, oil, vanilla, and bananas

2. In a separate bowl, sift dry ingredients together. (You don’t need to sift the brown sugar, just add it in)

3. Combine ingredients and pour into greased loaf pan

4. Bake at 325 for 80 minutes or until a knife comes out clean. (Place aluminum foil on edges if they start to darken before the middle is set)

 

This is not going to help my New Year’s diet.

Although we had her Smurf-themed birthday party earlier this month, today is Penny’s real birthday.

I hope I always remember you at this age and the way you…

go to bed late and wake up (very) early

already tell us when you have to go potty (except you say “off room,” your word for the bathroom) 

say “Welcome!” when you really mean “Thank you”

always try to sneak extra food to the dog

love baths

will not let me do anything with your hair

always have a crusty nose

kiss other people’s boo-boos

run to daddy with your arms out before he leaves in the morning, saying “Hug!”

think daddy is home every time you hear me open the garage door during the day

love string cheese and any other snack you are allowed to eat on the sofa

are infatuated with Dora the Explorer

use a singsong voice, tilt your head to the side, and smile when you say, “Noooo.”

are the only child in this house who does not care what color cup, bowl, plate, spoon, etc. I give you

have been singing Happy Birthday to yourself since last night.

I know there is an overall feeling of helplessness in our country right now. So many of us are at a loss for what to do beyond making phone calls and social media posts (which are still important, but can feel like not enough). I believe strongly in the power of small things adding up to big ones. As one person, I might not be able to do much, but what I CAN do is use my voice and my books to work toward the change I’d like to see. That’s why, for the next five days, from Jan. 30-Feb 3, I’m making the Kindle versions of my entire North Bay series (Out of Left Field, Right as Rain, and Way Off Base) completely free.
