There’s the birthday boy!

Today Nicholas turned 7. I think that officially makes me the mom of a big kid.

He took Spiderman cupcakes to his class on Friday and we went to Chuck E. Cheese and Cracker Barrel over the weekend and Nana and Gramps came to visit. He got to go to Target today and spend some of his birthday money on a new Lego airplane.

He also got a new mohawk haircut, which he loves. I dig it too. It matches his personality. Now his insides are on the outside.

It’s been a wild ride, that’s for sure. But we wouldn’t trade it for anything.

Almost six years ago we got an email from our social worker with pictures of a much smaller version of this face.We’re so glad we decided to take the leap of faith and bring him home.

I’d like you to meet Eddie Giese, P.E. He’s a graduate of the University of Maryland’s school of engineering, a licensed professional engineer, and a project manager. He spent several weeks over the summer of 2013 designing and constructing a water tank for a remote village in Burkina Faso, which is located in west Africa. He knows a thing or two about water systems and how they work.

Curious George Themed Kid’s Birthday Party

A Curious George themed birthday party

Nicholas’ birthday is in three weeks and I have ZERO ideas. But as I was thinking about birthday parties for boys, I remembered that I had never posted these photos from a friend’s party all the way back in 2012!

Our friends, Tim and Nicole, threw this party for their son and at the time I asked her if I could blog about it, but I must have gotten distracted and just forgot. Since then, their whole family has relocated to Papua New Guinea, where they are serving as missionaries. Nicole now writes a blog about their adventures over there. 

This was seriously one of the cutest parties.

Dutch Oven Week: Day 2- Beef Stew

Today I’m super excited to welcome back one of my dearest friends, Tabatha, for day two of Dutch Oven Week! Guess what? Tab just started a Facebook page for her new blog, Kooper’s Coop,  yesterday so please go give her a like.

The weather here has been cold and snowy – which is perfect for making a meal in my Le Creuset dutch oven.  I received it as a gift for Christmas, and have used it almost once a week since then. Needless to say, I LOVE it!!  Our favorites so far have included Chicken Noodle Soup, Potato Soup, Chili, and Artisan Bread. The hubby decided he wanted something different this time, so I opted to make Beef Stew.

Dutch Oven Week: Day 1

This week I am doing something a little bit different. It’s Dutch Oven Week! (I know, the name makes me giggle too. But this is not the kind of dutch oven where you trap your partner under the covers.) 

I’m featuring an entire line-up of one pot meals using my favorite pot, my Le Creuset dutch oven. Although I am partial to my Le Creuset, any dutch oven will do. I’ve also heard great things about the Lodge.

I have a few special guests planned for you later this week and I’m super excited to introduce you to some real-life friends of mine who also happen to be big foodies.

Sweet Stovetop Chili

Is it snowing like crazy where you are? This has been a rough winter here in Pennsylvania!

So today I have a seasonally appropriate chili recipe for you.

I’m not even sure I am technically allowed to call this chili, but I’m not sure what else to call it.

The rest of my family doesn’t really love traditional chili recipes and Eddie hates beans, so I never make it. But this crazy winter weather had me craving chili, so I made my own alternative version that doesn’t actually taste a thing like chili, except for the texture and the warmth. I was happy with the way it came out and the little taste-testers approved. It’s much sweeter than a traditional chili. More like chili and sloppy joes had a baby together. Also, I put chocolate in it. And beer.

So there’s that. But mostly it’s just vegetables and meat. I made it in my favorite pot of all time: my Le Creuset Dutch Oven. I’ll be sharing more one-pot dutch oven recipes like this one over the next few weeks. If the Le Creuset is out of your price range right now, the Lodge is a great option too.

Ways to Spread Encouragement on Valentine’s Day

Nine easy and practical ways to offer encouragement to a friend during a time of need

Yesterday I met with my Mom N Me group. This year we have several speakers talking about encouragement. We also did a Valentine’s Day craft and shared homemade snacks and cheesy valentines. 

I love Valentine’s Day. In fact, it might be my favorite of all the commercialized Christian holidays because it is an entire day dedicated to celebrating love and it has extended to people of all faiths. I know some people don’t like the commercialization, but I don’t see anything bad about celebrating love. 

However, this year I have had several friends and family members experience great loss and I know that this week will probably be difficult for them, which got me thinking that there are probable a lot of people who might struggle with feeling sadness, grief, or loss on this holiday instead of love.

Girls’ Reading Nook: No Money Makeover

No Money Reading Nook Makeover

Our girls share a bedroom. The room has two small closets and between them there is this window seat. (There is storage underneath where we keep clothes that Abby has outgrown that we are saving for Penny.) My vision has always been to turn this area into a little reading nook.

I didn’t want to spend a lot of money on this project.

I’m happy to report that the reading nook is finished and the final cost was…$0!

Eddie built some shelves from wood scraps that we had in the garage, using Ana White’s plans, and painted them with the paint left over from our fireplace mantle project. I tried to get creative to make the rest of the space cute and inviting.

I had some very ugly pillows that came with our sofa. They were so weird. The pattern reminded me of olives and eyeballs. Who wants to sleep on either of those things? Not me. Not only were they ugly, they were threadbare, flat, scratchy and just generally in rough shape.

I re-covered them with a yard of purple fleece that I had in my fabric stash. I bought it a few years ago when the fabric store had a crazy off-season sale on fleece. I was planning to use it to make pajama pants for the girls, but never did.

Now the pillows are much more comfy and cute. The model is pretty cute too.

We used old curtains from Eddie’s college dorm room to cover the windows.

I used a queen-size flat bed sheet for the white curtain in front. I just cut the sides off of the top hem to open it up and slid an old shower curtain tension rod through the hem. The tension rod was from a bathroom at our old house and didn’t fit the decor or the walls in our new bathrooms. Instant no-sew curtain! The curtain tie I think is canvas. I found it in my sewing scraps. You can’t even tell it is a totally different fabric because the colors match so closely.

Finances on Friday

I love following along with Rebecca’s Finances on Friday series and she has gone and turned it into a link party, so now I have to go ahead and link up too.

Ways we saved money this week:

-We lost our electricity for the day on Wednesday. Not super fun, but it was a whole day when we weren’t using electricity.

-Eddie worked from home 2 days this week, mostly because the roads were in terrible shape.

-We received the checks from my old 403 (b) plan and Eddie’s old 401 (k) from when we were both working in Florida-jobs we left years ago. We are working with a financial advisor to roll them over to a plan that makes more sense than just ignoring our money.

-Eddie realized that there was a problem with our electric bill. They were applying our payments to the old account, the one we had before we moved. It has been resolved and now we have an $82 credit towards next month.

-I was waiting until the next paycheck, which was last Friday, then this week I ordered a few more seeds for the spring garden. I’m planning to start most of our new garden from seed (I can start them inside in a few weeks) and I am only buying heirloom seeds so that I can save the seeds that this year’s plants produce and plant those next year, without investing more money.

-We went to the Pottery Barn outlet to look for a big girl bed for Penny, but didn’t find one that we liked. We decided to convert her crib to a toddler bed and make it last a little bit longer.

-It’s been so stinking cold and snowy that I have hardly been out of the house at all. It’s amazing how much money we are saving by just hanging out at home because I’m not ducking into Target for little things or having to get gas in the van as often.

-Instead of ordering a new book for my Kindle and paying for it, we unpacked some boxes of books in our office and I started reading The Chronicles of Narnia. I tried reading out loud to the kids at first, but they completely lost interest in less than 5 minutes. Maybe when they are a little older we can try again.

-Eddie wanted to buy a snow-blower. He looked in 4 different stores, but they were all sold out. So a shovel it remains. 

-I ate left-overs for lunches, used all the meat we had in the refrigerator for dinners,  and made another loaf of honey wheat bread. 

-I had to call a tow truck because I got our van stuck in a snow drift. It was free because we have a AAA membership.

-Nicholas walked to and from school, even though the weather was terrible, and I usually drive him when the weather is bad. (This was mostly due to the fact that the van was stuck in a snow drift.)

-I had over $75 worth of fruit and nut trees and hydrangea bushes in my online shopping cart from The Arbor Day Foundation, but I deleted them. (for now)

-I have a tv appearance scheduled for next week to promote The Cookie Jar Parable, but I did not buy a new outfit. (Even though I really wanted to)

-I booked a few sponsored posts for the blog, which will be spread out over the next month or so.

-I continued to work out using free YouTube videos.

Ways we splurged

-We have gotten SO BAD about ordering food. You would think we lived in New York City instead of rural Pennsylvania. I am trying to stick to my diet and order things like salads or chicken with brown rice, but we seriously ate out like 5 times this week. And Eddie buys his lunch every single day that he goes into the office. I need to start meal planning again. This is getting ridiculous.

-I keep letting Abby go to the extended preschool days on Friday, which adds about $50/month to her tuition, but she really likes it and it helps me get a lot of work done to only have one kid at home (the one who naps!) for that one day every week.

-We spent $50 on pizza and wings for just our little family of five for the Super Bowl. That was dumb. And NOT part of my diet. But delicious.

-I ordered a Valentine’s day gift for Eddie from Amazon. He’s already guessed that it is a set of books because the box was so heavy when it got delivered, but he doesn’t know which books.

-Penny lost a shoe while we were walking Nicholas to school this morning, but I didn’t notice until we were already back at home. I went back out and looked for it, but to no avail. If it doesn’t turn up, I’m going to have to buy her a new pair of tennis shoes. It’s a good thing she is so stinking cute.

I know there is an overall feeling of helplessness in our country right now. So many of us are at a loss for what to do beyond making phone calls and social media posts (which are still important, but can feel like not enough). I believe strongly in the power of small things adding up to big ones. As one person, I might not be able to do much, but what I CAN do is use my voice and my books to work toward the change I’d like to see.
