Dutch Oven Week: Day 2- Beef Stew

Today I’m super excited to welcome back one of my dearest friends, Tabatha, for day two of Dutch Oven Week! Guess what? Tab just started a Facebook page for her new blog, Kooper’s Coop,  yesterday so please go give her a like.

The weather here has been cold and snowy – which is perfect for making a meal in my Le Creuset dutch oven.  I received it as a gift for Christmas, and have used it almost once a week since then. Needless to say, I LOVE it!!  Our favorites so far have included Chicken Noodle Soup, Potato Soup, Chili, and Artisan Bread. The hubby decided he wanted something different this time, so I opted to make Beef Stew.

Dutch Oven Week: Day 1

This week I am doing something a little bit different. It’s Dutch Oven Week! (I know, the name makes me giggle too. But this is not the kind of dutch oven where you trap your partner under the covers.) 

I’m featuring an entire line-up of one pot meals using my favorite pot, my Le Creuset dutch oven. Although I am partial to my Le Creuset, any dutch oven will do. I’ve also heard great things about the Lodge.

I have a few special guests planned for you later this week and I’m super excited to introduce you to some real-life friends of mine who also happen to be big foodies.

House Tour Part 2: The Master Suite

A certain reader (it’s my mom) has been bugging me to post more house tour pictures.

Since it’s Valentine’s day, I thought I would show you the space I share with my sweetie. So today we’re going to tour the master suite.

It’s not decorated yet. We don’t have any pictures on the walls and I have big plans for the wall behind the bed. I do really like it just the way it is, though. It’s one of the only toy-free spaces we have right now.

This is the view as you walk in the door. Eddie and I have been talking about taking silver Sharpies to the wall behind our bed and writing our memories from our past 14 years together all over it. I think it could be really cool, but I haven’t been brave enough to try it yet.  [Read more…]

Sweet Stovetop Chili

Is it snowing like crazy where you are? This has been a rough winter here in Pennsylvania!

So today I have a seasonally appropriate chili recipe for you.

I’m not even sure I am technically allowed to call this chili, but I’m not sure what else to call it.

The rest of my family doesn’t really love traditional chili recipes and Eddie hates beans, so I never make it. But this crazy winter weather had me craving chili, so I made my own alternative version that doesn’t actually taste a thing like chili, except for the texture and the warmth. I was happy with the way it came out and the little taste-testers approved. It’s much sweeter than a traditional chili. More like chili and sloppy joes had a baby together. Also, I put chocolate in it. And beer.

So there’s that. But mostly it’s just vegetables and meat. I made it in my favorite pot of all time: my Le Creuset Dutch Oven. I’ll be sharing more one-pot dutch oven recipes like this one over the next few weeks. If the Le Creuset is out of your price range right now, the Lodge is a great option too.

Ways to Spread Encouragement on Valentine’s Day

Nine easy and practical ways to offer encouragement to a friend during a time of need

Yesterday I met with my Mom N Me group. This year we have several speakers talking about encouragement. We also did a Valentine’s Day craft and shared homemade snacks and cheesy valentines. 

I love Valentine’s Day. In fact, it might be my favorite of all the commercialized Christian holidays because it is an entire day dedicated to celebrating love and it has extended to people of all faiths. I know some people don’t like the commercialization, but I don’t see anything bad about celebrating love. 

However, this year I have had several friends and family members experience great loss and I know that this week will probably be difficult for them, which got me thinking that there are probable a lot of people who might struggle with feeling sadness, grief, or loss on this holiday instead of love.

Girls’ Reading Nook: No Money Makeover

No Money Reading Nook Makeover

Our girls share a bedroom. The room has two small closets and between them there is this window seat. (There is storage underneath where we keep clothes that Abby has outgrown that we are saving for Penny.) My vision has always been to turn this area into a little reading nook.

I didn’t want to spend a lot of money on this project.

I’m happy to report that the reading nook is finished and the final cost was…$0!

Eddie built some shelves from wood scraps that we had in the garage, using Ana White’s plans, and painted them with the paint left over from our fireplace mantle project. I tried to get creative to make the rest of the space cute and inviting.

I had some very ugly pillows that came with our sofa. They were so weird. The pattern reminded me of olives and eyeballs. Who wants to sleep on either of those things? Not me. Not only were they ugly, they were threadbare, flat, scratchy and just generally in rough shape.

I re-covered them with a yard of purple fleece that I had in my fabric stash. I bought it a few years ago when the fabric store had a crazy off-season sale on fleece. I was planning to use it to make pajama pants for the girls, but never did.

Now the pillows are much more comfy and cute. The model is pretty cute too.

We used old curtains from Eddie’s college dorm room to cover the windows.

I used a queen-size flat bed sheet for the white curtain in front. I just cut the sides off of the top hem to open it up and slid an old shower curtain tension rod through the hem. The tension rod was from a bathroom at our old house and didn’t fit the decor or the walls in our new bathrooms. Instant no-sew curtain! The curtain tie I think is canvas. I found it in my sewing scraps. You can’t even tell it is a totally different fabric because the colors match so closely.

Get Skinny Saturday: Week 6

It happened.

I’m actually surprised it took this long, to tell you the truth.

This was the first week I did not lose weight.

I may have cried when I stepped on the scale yesterday.

So frustrating.

Actually, I gained weight this week. I think. (Our scale is acting very strange. It gave me more than 10 different numbers in 5 minutes. I didn’t believe it the fist time I got on and it said I gained weight, so I tried again. Different number. Again. Different number. Almost every time I stepped on, it said something different. They were all within a few pounds of each other. I just took the one that came up the most often. That was yesterday. I tried again today and this number came up again twice in a row, so it’s the one I’m going with.)

The scale says 177.6 pounds, which is a 1.8 pound gain since last week.

Grrr.

Granted, I did totally ignore my diet on Super Bowl Sunday, but that was almost a weeks ago.

It just seems so unfair that one hot dog at lunch time and a slice of pizza and a few wings at dinner on one day could throw off a month and a half of work. 

I’m actually not sorry, although I am frustrated.

I don’t want to get back to a size 4 if it means that I can never indulge in stuff like that. I’m not going to stop having days like that occasionally. I know myself well enough to know that it would make me very grouchy and resentful if I didn’t.

I did still work out three times this week. (Four if you count the workout I’m planning to do after I finish typing this.)

I did order a salad when we went to a restaurant and everyone else ate hamburgers.

I did make a really healthy chicken stew (just chicken, sweet potatoes, carrots, onion, celery, and spices) and ate that for a few days.

I did make homemade bread out of organic whole wheat.

I did replace white sugar with honey every single time.

I did use salad plates instead of dinner plates to control portion sizes.

I did walk my son to school instead of driving every time that school was open this week.

It’s not even two pounds. It could realistically be related to my menstrual cycle.

My size 12 jeans are too big now, so I know I am still losing inches, even if the actual number on the scale isn’t dropping as fast as I would like it to. Even if it actually going up this week.

I think I can see a difference in my arms.

A few other people have made comments that they can start to see a difference too.

I know muscle weighs more than fat and all of that, but I sincerely doubt that I gained two pounds of muscle in a week by doing a few 20-30 minute work out videos.

Don’t worry, I’m not going to quit.

I still believe that this is the healthiest way, both physically and emotionally, to lose weight. Even it it takes a year or longer, which it might.

I’m not switching to some crazy, trendy, restrictive diet. I still believe that if at least 80% of my diet comes from real, unprocessed food and I continue to exercise regularly, the weight will come off. Eventually.

Actually, all of the controversy over The Biggest Loser this week has helped me see that I am doing this the right way.

Also, Eddie had a talk with me when I was busy sobbing in bed (away from my daughters) about the number and that helped a lot.

He got down on his knees next to the bed and looked into my eyes and said something like this,

“I understand that this is really frustrating. You have been working really hard and you are doing a good job. There are thousands of people reading your blog and you could really be helping somebody. We did eat some things this week that you know aren’t good for us. But, I did not marry you with the stipulation that you’d weigh less than 150 pounds for the rest of your life. I still find you attractive and I always will.”

And then I said something like, “Whatever. You have to say that because I’m the only person you’re allowed to have sex with.” Because I’m a peach.

But I did get out of bed and stop crying and I did work out and eat well that day. 

So here’s to seeing a lower number next week.

I know there is an overall feeling of helplessness in our country right now. So many of us are at a loss for what to do beyond making phone calls and social media posts (which are still important, but can feel like not enough). I believe strongly in the power of small things adding up to big ones. As one person, I might not be able to do much, but what I CAN do is use my voice and my books to work toward the change I’d like to see.
