I like this recipe because it works for people on plant-based diets, people who need to avoid gluten, and also just anyone who likes apples and cinnamon. (Who doesn’t?)
I like to make this apple crumble for breakfast, but you could serve it with whipped coconut cream cream or banana “nice” cream for dessert. (Or just regular whipped cream and ice cream if you aren’t avoiding dairy.)
I also love how flexible this recipe is.
Don’t have flax seed? Leave it out.
Want to make it oil-free? Try using apple juice or apple sauce in place of the dairy-free butter. (I would try a few tables of apple juice mixed with the apples, and applesauce mixed with the oatmeal. I haven’t tested it this way, though. If you do, please let me know!)
Don’t like nuts? Leave them out.
Don’t eat sugar? It won’t be as sweet, but you can leave that out too. Or if you want it sweeter, add a little more sugar. (I have not tested it with other sweeteners, but I imagine any granulated sweetener should work.)
And add whatever you want. Dried cranberries, raisins, chopped pears, a little bit of sea salt…whatever your little heart desires.
I hope you like it as much as I do. If you make it, please leave a comment and tell me how it turned out. And in the meantime, don’t forget to pin it to Pinterest.
- 4 Granny smith apples, chopped
- 2 cups of gluten free quick-cooking oats
- 1/2 cup of Walnut pieces
- 1.5 Tablespoons of cinnamon, divided
- 1/4 cup coconut sugar, divided
- 1 tablespoon ground flax seed
- 4 tablespoons of non-dairy spread, divided
- 2 Tablespoons of water
- Raisins
- Pears
- Dried Cranberries
- 1. Combine chopped apples in a bowl with walnuts, 1 Tablespoon of cinnamon, and half of the coconut sugar.
- 2. Spread the apple mixture in a baking dish and add water. Then top the apple mixture with small dots of non-dairy spread. (About 1 Tbsp total)
- 3. Mix quick-cooking oats and flax with the rest of the cinnamon and sugar.
- 4. Use your hands, a fork, or a pastry cutter to work 3 tablespoons of non-dairy spread into the oat mixture until it forms "crumbles." (Like small clumps of wet sand)
- 5. Spread the oatmeal mixture evenly over the apples.
- 6. Bake at 350 for 30 min.
- Large pieces of apples may need additional cooking time.
